I’ve had this meal all ready to share with you all for just over two weeks. Problem was, two weeks ago I thought I had the flu (but it was actually labor related) and never got around to blogging that day. Then the next day Lily was born and the rest is history!
This is a meal that my friend Brenda inspired one evening when I was whining to her about not wanting to cook dinner and not really knowing what to make. She asked what I had on hand and threw a couple of ideas out. One of them sounded mildly appealing, so I whipped up a little something based on that. You know what? It smelled awesome while cooking and the boys loved it! They loved it so much, they requested it for dinner the next night.
Easy Skillet Dinner
Potatoes (I have used baby red potatoes and yukon gold potatoes)
Peppers (I have used orange peppers and red peppers)
Turkey or Chicken (I used left over smoked turkey I had chopped and thrown in the freezer after Christmas)
Shredded Cheese (I used cheddar I think)
Olive oil and various herbs/spices
Heat some olive oil in a skillet, while you quarter small potatoes. Toss the potatoes into the hot oil and sprinkle on some of your favorite herbs and spices. I think I used cumin, basil, sea salt, freshly ground pepper and garlic. I think. My brain is kind of mushy right now!
While the potatoes are cooking over medium high heat (make sure you stir them once in a while!), cut a whole pepper into strips and also make sure you have your pre-cooked meat ready to go.
When the potatoes can be easily pierced by a fork, toss in the peppers and meat and stir it around. Cover the skillet and cook for another few minutes. Keep an eye on it though – you don’t want completely soggy peppers!
Top with cheese and stir it around a bit to melt and then serve!
Not only was this meal inexpensive (I figure my ingredients altogether might have cost $4 total), but it’s a pretty healthy one if you don’t go overboard on the cheese! And like I said, the boys absolutely loved it.
