Talk about a late post, huh? Last night we spent a whole lot of time in the car in order to see Nick’s brother play basketball (see yesterday’s 365 Entry) and didn’t get home until after midnight. Long story short, I got about 3.5 hours of sleep last night and then had my mom’s group meeting this morning. Thank goodness my FIL is in town and was nice enough to let me go lay down this afternoon while he hung out with the boys.
At any rate, all of that was to give my excuse for the super late post! On to the dinner post!
Chili Like Dish
Monday it snowed here. Something about snow made me want chili. Problem was, I didn’t have all of the chili making ingredients, and I hate making special trips to the store just to buy ingredients for a meal. Instead I like to improvise, and improvise I did!
That’s actually a picture of the left-overs I ate this afternoon. Looks kinda like chili and it smelled kinda like chili, but it really didn’t taste like chili. I loved it though!
Included in the dish was: ground beef, onion, 2 cans of diced tomatoes (semi-drained), 4 cans of black beans (rinsed and drained), 1 can of beef broth, sea salt, pepper, cumin, basil, chili powder and a little brown sugar.
Random assortment, huh? I cooked it all on the stove for about 90 minutes and it seriously was so good! I love it when a dinner improvisation/experiment turns out well.Plus, I figure that’s got to be a relatively healthy dish. Chase gobbled it right down, Jackson did alright and Tyler balked at it but then when I told him he had to take three bites because he’s three years old, he ended up liking it.
So here’s my question for you…
What kind of cook are you? Do you tend to just throw together whatever sounds good (like I do), or do you prefer to follow a recipe? Have any miserable dinner failures you care to share about?
I’m a recipe follower! I just had to laugh at your post because that’s what Ryan tells me all the time- “I will take 3 bites, because I’m 3!”
I am mostly a recipe follower. I do feel comfortable improvising when baking and adding sneaky ingredients to meals for the kids. Otherwise, I have decided that I am only a good cook when I have a really good recipe that I follow exactly.
Re your b-ball post, how fun! Liam is watching the Bucks since we are in Milwaukee and he says he wants to play basketball, but he thought that he had to grow tall enough to reach the hoop 🙂
This looks yummy! I will have to try it. I take a basic recipe, but change it sometimes.
I’m a recipe follower except for things like chili and soups. Never really the same thing twice.
I’ve got Chili on the menu tomorrow night! Last night I made stew. I thought of you as I was making it, thinking I really should take a picture and post it for your Wednesday theme. But alas, I didn’t. It was REALLY good, too. I was shocked!
