Nick and I don’t seem to realize it’s January and not July right now. We’ve cooked our dinner on the grill, on the back deck, twice this week already. First, Nick had a hankering for burgers so he fired up the grill one chilly night. Then, I had an idea of what to do with the chicken I had in the fridge and asked him if he’d mind firing up the grill for a second night in a row. Thankfully he didn’t mind and was willing to do the running in and out of the house!
Foil Dinner Packets
If you’ve ever been camping, it’s highly likely you’ve made a variation of this meal. I haven’t been camping since I was in high school at least, and Nick isn’t a camper so this was like a “new” meal to all of us. Packet meals are super easy and quick to make and the clean up is extremely easy!
Cut up all of your ingredients:
I used boneless skinless chicken breast, yukon gold potatoes, baby carrots and onion. While we were eating, Nick and I thought of all kinds of alternatives like apple slices, pineapple chunks, orange slices, etc. I also think next time I’ll try marinating the chicken.
Divide ingredients onto big pieces of foil and sprinkle with seasoning:
I used a Garlic and Herb seasoning mix to sprinkle on top and I also added a very small (maybe 1/2 tsp?) piece of butter for a little extra flavor and moisture.
Seal the packets as best you can.
Throw onto a Medium-High heat grill and leave for about 20 minutes. You don’t need to flip the packets.
The boys got a kick out of opening their own dinner packets and the food was cooked to perfection!
