I Have A Problem

Eleven days ago I made The Pioneer Woman’s iced coffee concentrate. While I had to modify the amount of coffee (1 pound bags are hard to find!) and thus the amount of water, and I had to strain it twice because I found coffee grounds in my first few cups, the stuff came out awesome. Oh, and I tried her suggestion of using some sweetened condensed milk in it…

Ugh. Seriously, so good.

So what’s the problem? (Besides the fact that I lay on the floor, drizzling sweetened condensed milk into my cup and took pictures of it, because Nick would say that was my problem…) The problem is I made this stuff 11 days ago and almost all of the 1.5 gallons (yes, gallons!) of it is gone.

Honestly, the only reason there’s any in my fridge at all is because I haven’t touched it for the last 3 days because I didn’t want to be the person who drank 1.5 gallons of iced coffee concentrate in a week.

I have a problem.

Granted, my sister in law had a cup when she was here, and I know my sister had one when she was babysitting for me last week. Plus, there’s the fact that Nick has been away at overnight camp for pretty much a whole week (he was home for a day and a half, but one of those days he was working all day), which obviously makes my life that much more exhausting.

Oh who am I kidding? I’m just making excuses and they really don’t hold up against the nearly gallon and a half of iced coffee concentrate I’ve consumed!

In other news, I photographed a sweet little newborn boy this past weekend! Ready to say “Awww”?

The boys did their first ever day of day camp yesterday and had a ball! Plus, they were exhausted after 6 hours of fun and all went to bed early for me last night. Woohoo!

Obviously up to their usual silliness! Hard to believe we’re closing in on the age of 4…

And this one, well she’s just as cute as ever! Rolling like crazy (we have to watch the floor around her activity mat because she’s constantly rolling off it) and we’re excited to start her on solids in about a week (when she turns 6 months)!

    • It really wasn’t too bad! I just kept the coffee sitting in my biggest stock pot for the 8 hours and then poured it through the cheese cloth. Other than the 8 hours of sit time I bet it only took me about 10 minutes to do the rest.ReplyCancel
