I mentioned on my Facebook Page last Sunday that as I was whipping up dinner I realized it was a recipe I’d never shared with you all, so I grabbed my camera and took a few pictures of it. I give you, Apple Cinnamon Chicken!
This recipe is extremely easy and likely involves ingredients you already have in your home.
Chicken (I used tenderloins, but I’ve also used boneless skinless chicken breast, that I’ve halved so that it cooks faster)
Apples (I used Fuji, but most any non-tart apple would work)
Cinnamon
That’s it! Three ingredients! Cut the apple into chunks and throw those and the chicken into a skillet over medium-high heat. Sprinkle some cinnamon on top and then cover the skillet.
Let that all cook and bubble together for 4 or 5 minutes and then flip the chicken over to cook on the other side. Re-cover for another 4 or 5 minutes.
Next you’ll want to uncover the skillet and let the majority of the liquid cook off. Watch closely though, because you don’t want everything to dry completely out!

I paired the chicken and apples with some garlicky broccoli and carrots (one of those steam in the package deals). Really though, the chicken and apples would go well with about anything! The chicken comes out super moist (thanks to most of the cooking happening in a covered skillet) and the apples are soft and cinnamony.
The boys all gobbled their food up, even my normally chicken-skeptical Ty! In fact, Ty said “Mommy, this chicken is very, very good!”.
Lily loved the food too! I think she downed hers faster than the boys did.
So there you have it – a simple, quick, inexpensive and healthy dish! I think I’ll have to make this again this week – I had forgotten how good it was!
