A Tasty Dressing

When trying to eat “clean”, but also stick a tight budget, you learn to make things for yourself. Take for example salad dressings. Have you ever read the ingredient list on the back of your salad dressing bottle? Yikes! There are some options in the refrigerated section of the grocery stores, but those can be mighty expensive. Solution? Make your own!

Using the ingredients you see above, I’ve come up with a dressing that the kids & Nick find tasty on salads or to dip veggies in, and it makes a killer chicken salad, egg salad, or tuna salad!

Here’s the thing though – when I cook I tend to not really follow a recipe. I guess you could say I create, rather than cook. On top of that, I don’t really pay attention to quantities, so when I make something that’s good, I have a hard time writing it down for future use! I really should change my ways and at least make notes while I cook, just in case I come up with something great…

So here’s the recipe, kind of.

In a blender, combine the following (to taste!):

Juice from half a lemon

1 cup of plain, greek yogurt

2 Tablespoons of honey

2 Tablespoons of olive oil

1/2 cup of apple cider vinegar

1/2 Tablespoon of chopped garlic

1/4 teaspon of cumin

salt & pepper

Blend it all up, and enjoy! Refrigerate any leftovers, in a tightly sealed container.

And PS, Nick hates yogurt and can usually taste it in anything, but he likes this dressing!
